Pumpkin Soup

Inspired by our day at the pumpkin patch yesterday, Garrett decided we should try the pumpkin soup recipe from his "Highlights High Five Nov. 2008" magazine. It was very delicious! So the recipe is to follow...

Soup from a pumpkin:

Ingredients:
1 apple
2 cups pumpkin puree
1 Tbs. Sugar
1/2 tsp. pepper
1/4 tsp. nutmeg
2 Tbs. butter
2 cups vegetable broth (I used chicken)
1 cup apple juice
1/2 cup half and half (I used whole milk)

Directions:
1. Peel the apple. Cut it into small pieces
2. Put 2 cups of pumpkin puree in a bowl.
3. Add 1 tablespoon of sugar, 1 teaspoon of salt, 1/2 teaspoon of pepper, and 1/4 teaspoon of nutmeg. Stir.
4. Cook the apple pieces in 2 tablespoons of butter over medium heat for 5 minutes. Put the pumpkin mixture in the pot and slowly add 2 cups of vegetable broth and 1 cup of apple juice. Heat thoroughly but do not boil.
5. Add 1/2 cup of half and half. Stir and serve. Yummmmm!
